The plaza between Disneyland and California Adventure is made up of terracotta hexagonal tiles. Some of the tiles, however, have had the names of families and individuals etched into them, along with dates of visits and whatnot.

What is the name of the service that provides this? And can it be accessed online?

You are talking about the commemorative “bricks”. These were sold starting when California Adventure opened and are $150 a piece. During the 50th celebration they also gave the option to add a medallion to the brick. For $35 more they give you a replica for your house. It was run by Disney and is a fund raising effort.
